Favorite Recipes This Summer

When summer hits, I always need some go-to recipes that are crowd pleasers. Between the guests we have visiting Chelan, to family gatherings and friend meet ups, I want things in my recipe box (yes, I have a tin recipe box!) that fuel my loved ones. Here’s some of my faves I’ve been making on repeat:

Double Chocolate

Chip
Muffins

Start your day on a chocolatey note with these Double Chocolate Chip Muffins. This recipe, courtesy of Sweet Laurel Bakery, combines the rich flavors of chocolate with the goodness of almond flour and protein-packed eggs. Not only are these muffins deliciously decadent, but they are also a healthier option for you and your family. The almond flour provides an extra dose of protein, making these muffins a satisfying and nourishing breakfast or snack.

5 C almond flour

½ C unsweetened cacao powder

2 tsp baking soda

1 tsp salt

1 - 1 ½ C 100% pure maple syrup, depending on how sweet you like it!

4 eggs

2 Tbsp vanilla extract

1 C chocolate chips + extra for topping

Preheat the oven to 350 degrees and line a muffin tin with paper liners. Combine the dry ingredients in one bowl and whisk, and combine wet ingredients in another bowl and whisk. Stir the dry ingredient mixture into the wet ingredients, and mix until there are no flour lumps. Then fold in the chocolate chips.

Fill up the muffin tins ¾ full, and top with any extra chocolate chips if desired. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean. 

Greek Salad

When it comes to salads, the Greek salad always steals the show. This classic Mediterranean dish is a delightful combination of fresh vegetables, olives, feta cheese, and a tangy dressing. For an extra twist, you can add avocado or quinoa to boost the nutritional content. You could even drizzle a small amount of honey into the dressing to add a touch of sweetness that complements the savory flavors. This Greek salad recipe from Ina Garten will transport you straight to the sunny shores of Greece.

1 cucumber, seeded

1 red bell pepper, diced

1 yellow bell pepper, diced

1 pint cherry tomatoes, halved

½ red onion, thinly sliced in half rounds

½ lb feta cheese, diced (not crumbled!)

½ C kalamata olives

For the vinaigrette, whisk together 2 cloves of minced garlic, 1 tsp dried oregano, ½ tsp Dijon, ¼ C red wine vinegar, 1 tsp salt, ½ tsp pepper, and ½ C olive oil. Pour over the salad ingredients, toss, and set aside for 30 minutes to let the flavors meld before serving.

Matcha Dream Smoothie

For a refreshing and nutrient-packed beverage, try my Strawberry Matcha Dream Smoothie! This delightful concoction combines the vibrant flavors of frozen strawberries and bananas with the goodness of matcha, collagen, spinach, and nut butter. The result is a light and creamy smoothie that is as nourishing as it is delicious. Packed with antioxidants, vitamins, and minerals, this smoothie is a perfect way to start your day or replenish your energy in the afternoon.

1 cup frozen strawberries

1 cup frozen bananas

1/2 tsp matcha

2 scoops collagen

Handful spinach

1 TBSP nut butter

Unsweetened almond milk

Blend and enjoy–it’s as simple as that!

Lemon & Olive Oil Dressing

This salad dressing, courtesy of Love & Lemons, is a fresh and delicious addition to any greens. We love it poured on top of an arugula and parmesan salad–the bright citrus pairs so well with the peppery arugula and nutty parmesan!

¼ C fresh lemon juice

1 small garlic clove, grated

1 tsp Dijon mustard

¼ tsp sea salt

Freshly ground black pepper, to taste

½ tsp honey or maple syrup

¼ C extra virgin olive oil

½ tsp thyme, optional

Whisk all the ingredients together, then toss with your salad greens for a tasty summer side. 

Watermelon Salad with Feta, Cucumber, and Mint

Another light and refreshing recipe to add to your summer table! This sweet and salty combo from the Mediterranean Dish makes a perfect hot weather snack. 

½ watermelon peeled and cubed

1 cucumber, cubed

¼ cup fresh mint leaves, chopped

¼ cup fresh basil leaves, chopped

½ crumbled feta cheese

Mix these ingredients together, then make the dressing with 2 Tb honey, 2 Tb lime juice, and 2 Tb of olive oil. It’s simple, but so bright and flavorful!
